Creamed Asparagus on Toast

It doesn’t get more old fashioned than creamed asparagus.This creamed asparagus uses fresh asparagus, not the canned type.

There’s honestly nothing better than fresh asparagus in the spring.My Dad planted an asparagus patch in the 1970’s, and since my family lives on the farm, I’ve inherited the patch as my own. Score!

Now, I generally make my asparagus in the microwave using this recipe 99% of the time as a side dish. But, a couple friends of mine mentioned that they ate asparagus in cream sauce for lunch, and I was intrigued to say the least.

I bet you can guess what I did next. Well I asked Diane and Tina for the recipe of course (thanks Ladies!), and it is one of those recipes with no ingredient amounts.

Taking an old fashioned recipe and figuring out the ingredient amounts is my kind of challenge.

I ran home, and whipped up this asparagus cooked in milk, and it is so very tasty. I love any type of creamed vegetable (peas, spinach, cabbage, corn), so I’m not sure why it hadn’t occurred to me to try creamed asparagus.

Ingredients for Old Fashioned Creamed Asparagus

  • Fresh Asparagus Stalks
  • Hard Boiled Eggs (optional)
  • Butter
  • Milk
  • Cornstarch
  • Salt
  • Black Pepper
  • Buttered Toast Points

What are toast points?

Some old fashioned recipes call for you to serve them along side toast points. A toast point is typically a piece of white bread that has been toasted and buttered. Then, cut the toast diagonally into two triangular pieces. Often times, the crust of the bread is also removed.

Even though white bread is typically used, feel free to use your favorite type of bread.You can also leave the crust on if desired. But the butter is required (in our opinion).

How to make creamed asparagus over toast

Step By Step Instructions

  1. Hard boil eggs. Cut into small chunks, and set aside.
  2. Wash and cut asparagus spears into 1-inch pieces.
  3. Par-boil and drain asparagus.
  4. Melt butter in a large skillet; add cooked asparagus, hard boiled eggs and half the milk and bring to a low simmer over medium heat.
  5. Mix cornstarch with remaining milk.
  6. Add cornstarch slurry to asparagus mixture; bring to a boil while stirring constantly.
  7. Season to taste with salt and black pepper.
  8. Serve over buttered toast points.

Storage Instructions

Let leftovers cool. Store in an airtight container or a container with a lid in the refrigerator for 3 to 5 days.

Almost all of the asparagus spear can be eaten. Trim off the woody end at the bottom, and discard before cooking. Or to make it even easier, just break off the bottom; it will naturally break where it is supposed to, leaving the woody end behind for the compost pile.

  • 4 Tablespoons butter
  • 2 1/2 cups milk
  • 2 Tablespoons cornstarch
